Trail Tater Shortcut Breakfast Potatoes

Ingredients

  • 1 carton prepared hash browns
  • 1 yellow bell pepper, diced
  • 1 medium onion, diced
  • Paprika to taste
  • Salt to taste
  • Black pepper to taste
  • A little oil or butter for the griddle/skillet, as needed

Trail Tater Method

  1. Heat the Blackstone or skillet over medium to medium-high heat and add a little oil or butter.
  2. Add the diced onion and yellow bell pepper. Cook until they begin to soften.
  3. Add the carton hash browns and spread them into an even layer.
  4. Season with paprika, salt and black pepper to taste.
  5. Let the potatoes sit long enough to brown before turning. Continue cooking and turning until hot through and browned to your liking.
  6. Taste, adjust the seasoning and serve hot.
